The Lactobacillus bulgaricus strain exists only in Bulgaria's climate — it does not survive industrial conditions outside the country. This is why the Japanese and Korean functional-dairy markets specifically require the Bulgarian strain.
Northern and north-eastern Bulgaria sit in the fertile black-earth belt with 700–800 mm rainfall and 2200 sun-hours per year — a combination Argentina and Ukraine cannot consistently reproduce year-round.
Karakachan and Tsigai sheep breeds graze at 1000–1500 m in the Balkan Range and the Rhodopes — wild herb pasture that produces a distinct flavour profile. French feta and Greek feta don't reach the same aromatic complexity.
Since 2018 Bulgaria has overtaken France as the world's largest producer of lavender oil. Cool Balkan nights concentrate linalool, and low pre-harvest rainfall produces a more stable profile than Provence oil.
